Italian Marinated Beef Medallions with Blue Cheese & Chives
- Your favorite beef, steak cut
- Italian Dressing, enough to cover steak as marinade
- Blue Cheese, crumbled
Cut beef into bite sized portions (or big enough to fit on your grill without falling through the grate)
Add beef to a ziplock bag.
Cover beef with Italian dressing.
Marinate beef in bag for 30 - 45 min.
Grill until cooked to your liking.
Cut into bite sized portions, if you needed to leave them bigger due to grill grate size in step 1.
Top with crumbled blue cheese, 2 or 3 pieces per serving.
Garnish with finely chopped chives.
