Rappahannock Cellars welcomes the Autumn season with our newest vintage of our signature Cabernet Franc. From our 2016 harvest, this wine is aged for 10 months in 30% new oak, both French and American. A full bodied wine, she boasts notes of cherry, oregano and sweet peppers.
Aromas of cherry, all spice and leather. Flavors of cedar, plum and cocoa.
One vineyard sits between 900' and 1200' elevation. Southeast aspect, with 10% grade. Rocky soil comprised of shale, limestone and clay. The other vineyard is 800' elevation, with shale, green stone and clay soils.
Fruit was destemmed with no crushing and pumped into tank and bins. 2-4 punchdowns or pumpovers a day. Allowed to age on skins for 7-12 days post fermentation, then pressed off. Wine settled in tank then racked to French and American oak barrels, ~20% new barrels.
2016 was quite wet in early spring making conditions challenging in the vineyard. July and August dried out and we saw good ripening and flavor development in both reds and whites. Merlot, Cab Franc and Chardonnay stood out.
